Tenderloin a fresh alligator tail, cutting pieces not to exceed 5cm x 2 1/2cm thick. Place in a shallow dish.
Pour on a small amount of vinegar and add salt and pepper and cayenne to taste. Let stand for
approximately 30 minutes. While the gator soaks, pour into a dusting bag or other container four parts of
corn meal to one part of flour.
Put about an inch of oil in a skillet and heat it to 200 C. Roll or shake the alligator strips in the dusting
mixture, then place in the hot oil and fry until they are golden. Use only enough pieces to cover the bottom
of the skillet. Serve hot.
