This bread takes about 1 1/2 hours to prepare. Sift the flour 2 and salt into a bowl, then rub in the butter
with your fingers. Add the water and work the ingredients together to make a firm dough. Knead the dough
for about 4 minutes, then leave it to rest for 1 hour.
Divide the dough into eight portions and roll each piece into a ball.
Flatten the balls into small discs about the size of the palm of your hand, then roll them out to give rounds
measuring 10 cm in diameter and 3 mm thick.
Heat the oil for deep frying to 185c/370F and deep fry each puri, pouring hot oil over the exposed surface of
the bread during cooking to make it puff up. Serve hot.
